Position Summary:
Lead Line Cook is responsible for preparing batch recipes, cold food items and assists in all kitchen activities to ensure that guests receive high quality food items in a timely manner.
Essential Functions:
Able to "prep" food products, using standardized food preparation techniques.
Wash, peel, cut, and seed vegetables and fruits; clean, cut, and grind meat, poultry, and seafood; dip food items in crumbs, flour, and batter to bread them; stir and strain soups and sauces, etc.
Prepare all cold sauces, dressings, salads, and desserts
Weigh and measure designated ingredients.
Carry pans, kettles, and trays of food to and from work stations, stove, and refrigerator.
Store foods in designated areas utilizing knowledge of temperature requirements and food spoilage.
Maintain sanitary regulations of food temperatures. Rotate all products.
Perform cleaning and organization of reach-in and walk-in coolers.
Maintain work area, including all counter tops, utensils, equipment, garbage, and refrigeration in a clean and sanitary condition in accordance with state, county, and company health regulations and work safety regulations.
Maintain high standard of personal hygiene in compliance with state, county, and company policy.
Conduct self in a professional manner at all times.
Maintain a safe working environment and immediately report all unsafe conditions
Maintain a good working relationship with all departments.
Comply with all policies and procedures set forth by the property Employee Handbook.
Perform all other duties as assigned.
Fill out daily prep list using prep sheets. Following pars and batch sizes to ensure proper prep levels ae maintained.
Assisting management in instilling new recipes into prep rotation.
Training prep team on new items.
Delegating prep tasks to appropriate team members to ensure proper productivity levels are being met
Following up with prep team to verify quality of work is being met.
Previous culinary experience.
Knowledge of food preparation, materials and equipment.
Possession of government required licenses or certificates.
Physical Requirements:
6-8 hours: Standing/Walking, Reaching, Grasping
3-6 hours: Crouching/Bending/Stooping. Pushing/Pulling, Lifting/Carrying (up to 50 lbs.)
Up to 1 hour: Climbing Stairs, Sitting
