Sous Chef Position Summary:
Our Sous Chef is responsible for assisting the Executive Chef in the operations of the kitchen which includes coordinating the activities of the line cooks and overseeing food production operations to ensure the highest quality standards are maintained for the property.
Sous Chef Essential Functions:
Coordinate and participate in the activities of preparing and cooking foods to ensure efficient and profitable food service.
Perform all functions of the Executive Chef in his/her absence.
Make sure that all dishes are prepared correctly and that meals are delivered to the guest in a timely manner.
Assist in the development of recipes, plan menus and prepare food in collaboration with the Executive Chef.
Assist with selecting, training, supervising, developing, disciplining and counseling employees in the kitchen.
Familiar with food safety rules and restaurant health standards.
Orders product and supplies for entire kitchen.
Prepares weekly schedule.
Maintain product inventory levels and c odes and logs all invoices.
Oversees employee meals.
Butcher meat/fish/poultry.
Creates and delegates prep list
Creates daily specials for banquet functions when necessary .
Ensure a safe working environment for kitchen staff.
Maintain a schedule of cleaning projects for cooks.
Conduct self in a professional manner at all times.
Maintain a safe working environment and immediately report all unsafe conditions.
Maintain a good working relationship with all departments.
Comply with all policies and procedures set forth by the property Employee Handbook.

Sous Chef Qualifications:
Three years culinary experience preferred.
Possession of government required licenses or certificates.

Physical Requirements:
6-8 hours: Standing/Walking
3-6 hours: Crouching/Bending/Stooping; Reaching; Grasping
1-3 hours: Pushing/Pulling; Lifting/Carrying (up to 50 lbs.)
Up to 1 hour: Sitting and Climbing Stairs
